Acorn is the first Denver restaurant from Restaurateur Bryan Dayton. Located within the Source, a reclaimed 1880’s refinery turned edgy new epicurean marketplace, Acorn boasts Executive Chef Ian Palazzola’s eclectic American, wood-fired cooking in an approachable, family-friendly format. Acorn is also known for its ingredient-driven cocktails, robust selection of artisan wines and beers, handcrafted spirit-forward and low ABV cocktails, as well as inventive non-alcoholic creations. Cement and graffiti accents give the space an urban, eclectic feel – while marble tabletops and stylish lighting give the restaurant a sense of modern elegance.
OAK at fourteenth, located in the heart of downtown Boulder, features a refined New American menu that highlights the unique flavor profiles created by the custom oak oven and grill. The ever-changing seasonally inspired menus offer selections from Colorado’s abundant agriculture landscape and are organized into shared & small plates, large plates and family plates. OAK also offers a selection of hand-crafted cocktails with specialties including low ABV and non-alcoholic cocktails, a variety of artisan wines and beers, as well as unique house made bottled sodas. With an open kitchen design and oak-fired oven, the entire restaurant is warmed by JBF Award Nominee Chef Steven Redzikowski’s regional American cooking. Guests can dine overlooking the kitchen at the chef’s bar, or choose to dine in the 90-seat main dining room.
Corrida, the latest concept from celebrated Restaurateur Bryan Dayton (of Half Eaten Cookie Hospitality) and Executive Chef/Partner Amos Watts, is a Spanish-inspired steak restaurant that captures the celebrated facets of Spanish cuisine and culture as well as the bounty of fresh ingredients available in Colorado. Located on the rooftop level of downtown Boulder's PearlWest building - a coveted space that offers one of the only unobstructed views of the Flatiron mountains - Corrida’s versatile menu invites guests to create their own customized dining experience. Heavily influenced by Northern Spain’s Basque Country, offerings include large family style servings of various cuts of wood-fired steak, an extensive list of tapas and pintxos, and a selection of meat and seafood-inspired entrees. The beverage selection features an impressive all-Spanish wine and sherry program, creative Spanish-inspired cocktails (including a dedicated section of tableside GinTonics), as well as beers and ciders from both Colorado and Spain.
